Casatella Trevigiana DOP and Mozzarella TSG: Unique Treasures

The Treasures of Latteria Soligo

Not just ordinary cheeses, but real… Unique treasures. Treasures of goodness and tradition, of taste and culture. Expressions of a region, that of the Marca Trevigiana, Veneto, and Friuli Venezia Giulia, which, growing on solid peasant roots, has always considered cheese a “pillar” of the daily diet, a fundamental food for family meals and gatherings, an essential ingredient in countless recipes, from the simplest to the most refined.

Each with its own story, and each with its characteristics and peculiarities, the unique treasures of our table are the fruit of ancient knowledge (like Casatella) or more recent innovations (like Mozzarella) from the master cheesemakers of Veneto and Friuli, produced today with fresh milk collected daily, monitored, and processed using technologies that ensure the highest food safety.

Casatella Trevigiana DOP and Mozzarella TSG are produced according to precise standards, respected and monitored by independent bodies. This is why they bear European quality labels (DOP and TSG), guaranteeing their quality, origin, and production.

Unique treasures, treasures of goodness. Guaranteed.

Casatella Trevigiana DOP

The name “Casatella Trevigiana” comes from its humble homemade origins. This fresh cheese was once made in home kitchens, where housewives worked with the small amount of milk available. It was made especially in winter when the milk was richer in fat and of better quality. In times of need, when there wasn’t enough milk for the family, the missing amount would be borrowed from the nearby dairy.

This generous and simple form of solidarity reflects the early signs of future cooperation, which in the 20th century would become a pillar of cheese production in Treviso.

Characteristics

Casatella Trevigiana DOP is a soft, uncooked cheese that tends to be sweet, ready after a quick maturation. Initially, its texture is compact, but it softens and becomes creamier over time, while the rind is either absent or barely perceptible.

To be true Casatella Trevigiana DOP, the milk must come exclusively from farms in the province of Treviso, the only area where this fresh cheese can be produced. The cheesemaking process, as well as the maturation and packaging, must also take place in this designated production area.

Casatella Trevigiana DOP is a perfect modern cheese for its freshness and nutritional characteristics, yet it carries a rustic, old-world feel, with a delicate milk flavor inherited directly from its primary ingredient.

Mozzarella STG

In the 1960s, mozzarella production began in the Alta Marca Trevigiana, a fresh cheese traditionally from Southern Italy.

The secret of Mozzarella TSG (Traditional Specialty Guaranteed) lies in the choice of raw materials (fresh milk) and in its preparation, which is based on traditional rennet coagulation (using natural rennet) rather than citric acid. This is why in 2009 it was awarded the European TSG quality label.

Characteristics

Mozzarella TSG is a fresh, stretched-curd cheese made only with fresh milk, salt, natural rennet, and self-produced cultures: ingredients processed according to the TSG production standards. White in color, it has a tender skin, with a smooth and shiny homogeneous surface. The interior is made of overlapping layers, and when cut or slightly pressed, it releases a milky liquid, a symbol of its freshness.

The milk for Mozzarella TSG comes from cows raised with love and care, with permanent access to the outdoors and free to graze in the meadows when weather conditions allow. In the barn, they enjoy suitable bedding and are fed high-quality products. Rustic cattle breeds, typical of the farming area, are favored.

Mozzarella TSG can be enjoyed on its own, as an ingredient in tasty cold or hot dishes, and is perfect for pizza.
